Why write a short, single-subject cookbook?
Over the years, so many readers have asked if I could write a cookbook with just cookie recipes, just breakfast recipes, just Paleo. The answer was always, "I would love to, but my publisher said no..."
Publishing cookbooks the traditional way, like I've done since 2011, is a long and difficult process. The entire lifecycle of one of my full cookbooks from contract deal to publication is a year or more.
So we're trying something new...
I still love writing cookbooks, but after 10 years of publishing recipes, I’ve decided to step away from publishing books with a traditional publisher for now.
I’m more comfortable speaking directly to you, as I’ve done since 2009. And when you give me feedback, I can respond right away and make changes going forward.
By creating short books with niche subjects, I can respond quickly to the sort of books you want now. And I'm free to write cookbooks of all types, starting with this first micro book, No Bake Desserts.
Why start with No Bake Desserts?
Gluten free baking can seem hard enough, and anyway it's summertime. So let's start with something so straightforward, it requires no time in the oven.
No "Filler" Recipes
Stellar taste and impressive presentation, all without any time in the oven. This simple collection contains 10 favorite "back pocket" warm weather recipes, including Edible Cookie Dough, Cheesecake (2 of these by the way), Homemade Ice Cream, Healthy Fudgesicles, and more.
There aren’t any of the filler recipes that you find in some cookbooks just to fill out the pages. It’s all no bake gold!
What's in the collection?
This book has 10 of my favorite, go-to, no bake gluten free recipes. They're perfect for last-minute summer gatherings, whipping up a sweet treat on a warm day.
No Bake Fudge Oatmeal Cookies
The classic chocolate no bake cookie you remember, made with or without peanut butter—even with or without oats. Naturally gluten free!
Easy Vanilla No Bake Cheesecake
A plain vanilla cheesecake made with cream cheese, sour cream and a touch of gelatin. It’s quite simply ... perfect.
Made with just 4 healthy ingredients, you'll put the ice cream truck to shame this summer (with a treat you feel good about).
No Bake Strawberry Cheesecake
A smooth and creamy fruit cheesecake, made with strawberries, cream cheese, and whipped cream, plus a bit of gelatin and sugar. Decorate with the season's best!
Edible Cookie Dough
There are two variations of this recipe, and neither one calls for "regular" GF flour or eggs. Perfect for when everyone wants to eat the cookie dough, but you don't want that on your conscience.
No Churn Dairy Free Ice Cream
Ice Cream anyone? This No Churn Dairy Free Ice Cream is the perfect consistency, and exactly what you need on a hot summer day.
Paleo Mug Cake
This chocolate Paleo mug cake is lightly sweet, rich, and easy enough for kids to make their own. Even my teenage son who burns himself on the toaster makes this for himself!
Homemade Marshmallow Creme
The taste of homemade marshmallow creme is far superior to any store bought versions. It’s also the perfect topping for a simple bowl of ice cream!
I don’t pretend to serve my children a completely chemical-free diet, but I’m happy to be able to make them something like this entirely from scratch and with nothing more than a simple blender.
Basic No Churn Vanilla Ice Cream
You are 3 common pantry-style ingredients away from the richest and creamiest homemade vanilla ice cream of your life. And you don’t need an ice cream machine to make it.
